What used to be a vegetable farm is now a regenerative coffee farm, in the near future it will be a biodiverse food forest with luxury quality Geishas and other varietals growing under its canopy.
The main goal of the farm is to fix as much carbon as possible, removing it from the atmosphere and returning it to the soil where it belongs. By increasing the fertility and the life of the soil the cup quality will improve every year. This method of farming is not only beneficial for the environment, but also for the health of our consumers. A true expression of the Panama terroir.
Our Geisha trees are the direct decedents of the plants that our grandfather imported from Costa Rica in 1969, making them 100% pure Green Tip Geishas.
In our microclimate ripening is slowed down by cold and misty days. We harvest our cherries during the driest time of the year with the highest sugar and aroma compound concentration.
LOT DETAILS
This lot was harvested in March´s new moon in Pisces, a phase that produces our best coffees.
It was fermented for 18 hours on open tanks and dried on a our Dark Drying Room for 20 days. This process produced a Classic Washed Geisha that reflects the delicate and elegant profile for which our coffee is regnized around the world.
